We are finding it a pain to change the history filter to "include all dates" for every person we are looking up. Is there any way to change the default to include all dates automatically?

In Version 11 and 11.1, you can save report profiles and set them as the default. On the Report Options or Selection Criteria screens, you will see a little gray toolbar across the top of the screen. There are controls there to save a new report profile or open an existing report profile.

Sorry, in re-reading your post, it looks like you are talking about the Filter button on the Personal Profile > Attendance and Contribution tabs.

Originally, when Version 11 was released, there was no filter in place on those tabs and it left the program handling lots of data every time you looked at a different person. It was required to make the program not bog down completely in large data sets. By default, it shows you all of last year and year to date this year.
