I have a list of college students who are members of the church and listed under their family's profile. Is there a way to change their addresses without making a whole new profile just for them?

Unfortunately no ... the mailing address is kept at the Mailing LIst profile level, and the only way to have a different address, is to create a separate mailing list profile.

That said, nothing says that you can't create a separate Mailing LIst profile for each student, but keep the personal profile under the parents. You don't have to have create personal profile in this case.
