We want to have a resource maintain the Visitation records, however, we are hoping she can make changes to a small section of the database and not interfere with Contributions and Fund Accounting.
My question is what files does she have to backup locally on her PC such that she can work on it daily as time permits, and then maybe once a week restore those files to the main database (be part of a full backup/restore). Is it just the RECORD KEEPING FILES option?

Visitations is in Membership, so it would be a Membership backup.
Be careful with that, though, if restoring a Membership backup only once a week, you could overwrite information that other staff at the church has entered or changed during that time.

I'm going to assume that the resource would not be working on any church network, but would be working from home? There is no good way to do that in this case, as Zorak pointed out, there is no way to break out the visitations area of the membership area of the database.
That said, if the person were working on a system connected to the church network, then they would be updating the main database, and the normal backup routine for the Powerchurch backups would cover everything.
