Can you restore a previous year's information without changing anything on the current year's records?

Nope ... the restore will overwrite the existing data no matter which module. You can do a backup of the current data, then restore the backup you want to retrieve data. Then restore the current data.

FWIW .. I'm guessing what you want to look at is not accounting data, as that is available until you manually decide to delete it.
