For the life of me I can not figure out how to edit a reoccurring event to update all occurrences. My second thought was that I would just delete all occurrences and create a new recurring event, and I cant even figure that out.

Any help would be greatly appreciated.

Unfortunately, you can't edit all occurrences at the same time. I'm not sure exactly why, I really need to ask about that.

However, you can delete all the occurrences by opening the EVENT CALENDAR from the Events Menu, right click on the recurring event, then select DELETE from the right click menu that appears. A window will then pop-up asking you if you want to delete the Current Event Only, the Current and all remaining, or all occurrences of the event (past, present & future).
