Is it possible to record visitation based on individual? For ex- if a family - husband & wife plus children residing in one household, if visitation target is one of the children, is it possible to select the particular children and not the whole family?

Or if our ladies committee visitation team will visit only the wife?

No, however you can add notes to explain who was visited.

May I know where I should I add the note who among the family members was visited specifically?

In the visitation module when you add a visitation record, there is a place you can add a note.
