Personal information such as e-mail address, cell phone, and birthday are stored in the Personal Profiles module. It sounds like you are running the Export Data process in the Family Mailing List module. The same option is also available under the Personal Profiles menu.
Keep in mind, you will be exporting raw data, not family grouped data, so information that applies to the whole household will be repeated for each family member.
