Is it possible to show the year as well as the date of birth and anniversary in Today?

I don't believe so. That area was created for a quick reminder of whose birthdays and anniversaries would fall during the period set in the users preferences.

For a full date you can click on the name to see the personal profile pages, or run a standard report.
