Maintain Vendor Records

Is there a way to add a vendor without a vendor name? Ex. Guest speaker expense, everything is the same except the payee name changes every time. I want to be able to make a transaction and just have to edit the payee only without having to add a new vendor each time.

You can't. But you could change it once you have created the original vendor. The problem I see with this is tracking what you may have paid to a particular guest speaker and should you have that speaker back several times in one year and they go over the $600 threshold you will need to issue them a 1099. You could not do this with your suggested method.
