Is there a "convenient" way to recover the view showing the original fill-in screen for a check that has been previously posted? The intent in this case is to recover a vendor account number that should have been on the check but was not entered elsewhere.

Unfortunately, no ... you would have to ask your bank for a copy of the check. The easiest way to make sure this doesn't happen again is to add it to the Vendor record, and check the box to print it in the memo area of the check.

With our bank, I can view and/or print a copy of a check I have written online while looking at transactions. I don't think all banks offer this, but you might check into it.
