I want to know how to handle a donation for an amount that the church has already paid for?

From your question, I'm assuming this:

The church paid for some equipment or service from the general fund (or a specific fund for that matter).

Someone has now come forward and is willing to donate the entire cost of said equipment or service.

If this is correct, I would just accept the donation as a standard donation for the general fund (or that specific fund) and list such on the contributor's contribution statement.

I'll just throw in my two cents' worth here. I agree with Neil completely. Trying to track and post these kinds of donations will drive you crazy, especially if the donations are more or less than th expenditure for which they are intended.
