I'm trying to figure out how to run a report to draw out all the youth of our church. Essentially it'd be a list of 7th through 12th grade students including their names, mailing address, grade, school and phone number.

Can you tell me how I would run this report. I've tried everything I can think of, and I'm an IT professional.

The only way to do this is by birth date if this data is kept in the system.

The other way to do this would be if the youth were setup into Sunday School Classes by grade level, and pull the data from that submodule.

Unless that data is kept, or the activities setup, there's really no other way of doing it. The old G.I.G.0. dictum rules, as with any database.
